Chicken, avocado, tomato and lettuce wraps

A tasty meal for the whole family to share.

Eat straight away and prepare to get messy. Double the quantities and invite some friends around!

Method:

  1. Mix the paprika, chilli powder, salt and oil in a mixing bowl. Add the chicken, making sure it is fully coated in the mix. Leave to marinate for 20 minutes or longer in the fridge (pop it in in the morning, and it will be super tasty by dinner time!)

  2. Heat a non-stick pan, griddle pan or barbecue with a little oil.  Flatten the chicken pieces against the pan, then leave them to cook for 10-12 minutes until crisp. Turn the chicken breasts over and cook for a further 3 to 4 minutes until cooked through. Transfer the chicken to a chopping board or plate and cool for 5 minutes, then cut into 1cm strips.

  3. Mash the avocados with a fork. Add the lime zest, lime juice, chilli flakes and Worcestershire sauce. Season with salt and pepper. 

  4. Spread some avocado onto a lettuce leaf. Add chicken, peppers, tomatoes (and an optional dollop of crème fraiche) then roll the lettuce into a wrap shape. Eat straight away! Be warned this is messy food.

     

Ingredients:

  • 2 large skinless chicken breasts

  • 1 tablespoon paprika

  • 1 teaspoon chilli powder

  • 1 pinch salt

  • 1 tsp rapeseed oil


For the avocado::

  • 2 avocados

  • 1 lime - both zest and juice

  • 1 tsp chilli flakes

  • 2 tbsp Worcestershire sauce

  • 1 pinch salt

  • 1 pinch pepper

For the wraps:

  • 1 large lettuce - iceberg or romaine ideal

  • 2 red peppers - sliced

  • 1 punnet cherry tomatoes - halved

  • 1 small tub crème fraîche - optional
